This large-batch Penicillin combines the warmth of Scotch, the brightness of lemon, and the subtle sweetness of honey-ginger syrup, finished with a smoky Islay Scotch float.

Blended Scotch: 142 oz (17.5 cups / ~5.5 fifths)

Honey-Ginger Syrup: 57 oz (7 cups)

Lemon Juice: 57 oz (7 cups)

Garnish: with candied ginger or a lemon wheel

Islay Scotch (float): 0.5 oz

Final Volume: 256 oz (1.6 gallons)

Serve: Pour into glasses over ice. Add a small float (0.25-0.5 oz) of Islay Scotch to each glass.
