The Butterfly Collins is a vibrant twist on the classic Tom Collins. Butterfly pea flower tea gives it a brilliant indigo hue that magically shifts to pink when mixed with lemon juice. Light, refreshing, and just sweet enough, this is a show-stopping drink for parties or events.

Gin: (2) Bottles (1.5L)

Lemon Juice: 3 cups

Simple Syrup: 2-1/3 cups

Butterfly Flower Tea Concentrate: 3 cups

  • Brew butterfly pea flower tea strong (3–4 bags in ~3 cups hot water). Chill completely.

Club Soda: ~3L (128 oz)

Garnish: Lemon wheel

Final Volume: ~1.7 gallons
